Healthier You

Welcome to the Neighborhood News

To have the energy to accomplish anything during our busy lives, we need to eat the right foods, keep our bodies in top shape and be smart about the choices we make with respect to our health. After all, we only have one body, and we need to take care of it. Giving us some counsel about what to eat and when, we have Brooke Parker. She’s a Registered Dietitian working for Utah State University, and specializes in Eating Disordered patients and loves helping her clients enjoy food again. Brooke also blogs at ‘Love Your Body,’ and wrote her article “Eating for Grades.” In it, she tells us : “Energy is based on sleep patterns and maintaining an active lifestyle. Proper nutrition cannot cover for a chronically sleep deprived individual.” And she gives us six steps to follow that are basic concepts to simplify the school nutrition obstacle for you and your children.




What drives you? Is it family, cooking, scrapbooking, running a marathon, riding a bike? Our next contributor is Stacy Summers. She blogs at ‘Spoonfulliving,’ and she wrote her article named “Sing Along the Way!” She mentions a bike ride she did in Sparta, where she found three tunnels she had to go through. She says that there was no way around, just through, and that to pass the time she did this. Read and find out.



Right now it’s time for canning or freezing those vegetables that you spent all summer weeding and watering (or just bought from the grocer). Susan from ‘Provident Mommy,’ wrote this article “Pickling Cucumbers!” She tells us where she got the cucumbers, and what to get to pickle them. I like the recipe, and am going to try it. It seems simple enough.

GOAL Is A 4-letter Word

                                  Welcome to the Neighborhood News!

We're always making and breaking goals. How can we make sure we'll be able to achieve the goals we come up with at the beginning of the New Year, the beginning of a marriage, or, for that matter, any kind of new beginnings?
Cami Checketts writes about 'Setting Achievable Goals'. She tells us: "If you’re like me I’m on fire about my lengthy list of goals and then a couple of weeks into the year I realize something – my list is too long and I’m miserable. I’ve finally discovered that it doesn’t work for me to make too many goals at once."

On the other hand, Kasie West from Mormon Mommy Bloggers says it like it is, with the following statement: "Goal always has to be a four letter word, but it doesn't have to make you feel bad. Obviously goals are important."

Alliance for Unity Food Drive

Congregations of all denominations will join together to donate food to the food banks throughout Utah on Saturday, December 6th. The goal this year is more than one million pounds of food.

Members of church congregations will organize the food drive in their own area, collect the donations and deliver them to designated drop off points. To find out the location of your community’s food bank and their drop off locations go to www.FoodBanksofUtah.org.

The food banks in Utah are thankful for the generosity of their communities. The need is greater than ever. Food banks throughout Utah are experiencing a 20% to 50% increase in those seeking help since last year.

In these tough times we can give thanks for the many things we have – family, friends, home and caring neighbors. The food banks are thankful for the community’s past support. Because the need is great, please give generously to the food drive on December 6th. If each one gives a bit more then many more can be helped.

Individual family donations are being accepted at all Jiffy Lube and Smith Food King locations throughout the holiday season.

Recipe: Sweet Cornbread

A long time favorite, both from my childhood and that of my family now, is sweet cornbread. There is just nothing like sliding cornbread fresh from the oven, slicing a piece open and slathering it with butter and honey. Oh my word, my mouth is just watering and you can guess that dinner tonight will center around cornbread. That's a given!

This recipe is tailor made for butter and honey, drizzled over a steaming hot piece of cornbread like syrup.

So I invite you to throw some chicken in the oven, toss a green salad, boil some ears of corn (bring water to a boil and throw corn in for only 3 minutes. Gets the corn hot but keeps it fresh, crisp and nutritious.) And top the whole thing off with some delicious cornbread.

Sweet Cornbread
Preheat oven to 400°
Lightly grease an 8" skillet.

In a large mixing bowl, beat together until creamy:

b C. Sugar
1 t. Salt
a C. Butter
1 t. Vanilla
Stir in:
2 Eggs, one at a time

In a separate bowl, mix:

2 C. Flour
1 T. Baking Powder
¾ C. Cornmeal.

Stir into wet mixture alternating with 1a C. Milk . . .
be certain to alternate, dumping neither in all at once.
Beat until well blended.
Bake in preheated oven for 20 minutes or until golden brown. Serve warm.
